Morning Show with Kimberly Walters and Tim Joyce
Chef Becky was a guest on the Live NBC Morning Show with Kimberly Walters and Tim Joyce. She demonstrated how to make "Confetti
Chicken," a client favorite. It is a colorful dish, consisting of chicken breasts breaded with crushed tortilla chips. The
breaded chicken breasts are pan fried and topped with a delicious Black Bean Salsa.


Confetti Chicken
Chicken:
Ingredients:
1 egg, lightly beaten
1/2 cup yellow, red, and blue corn tortilla chips, crushed
2 6-ounce chicken breasts, boneless and skinless
2 tablespoons olive oil
Finely crush tortilla chips in a plastic bag. Cover chicken breasts with beaten egg. Coat chicken in crushed
chips, pressing chips into chicken. Sauté chicken breasts over medium heat in a non-stick skillet with the oil,
approximately 5 minutes per side. Check chicken for doneness with a knife.
Confetti Salsa:
Ingredients:
1 cup canned black beans, rinsed
1/2 red bell pepper, diced
2 tablespoons cilantro, chopped
2 tablespoons frozen corn
1/2 jalapeno, finely diced
1/3 cup tomato, diced
1 tablespoon red onion, minced
2 tablespoons lime juice
salt, to taste
1/2 teaspoon cumin
Mix all ingredients together, spoon over chicken breasts and serve.
Serve on a bed of white rice, garnished with fresh lime slices.
