Morning Show with Tim Joyce and Zetty McKay

In preparation for St. Patrick's Day, Becky, Zetty, and Tim created several favorite dishes from Ireland. For warming up in the winter months, the Irish love hearty stews. This dish features the national beer, Guinness, tender pieces of beef, and vegetables.

For dessert, we prepared Strawberry Rhubarb Fool. Fool is a traditional European dessert containing pureed fruit that is gently folded with whipped cream. Using real, homemade whipped cream makes all the difference in this dessert.

Beef Stew with Guinness

2 pounds cubed beef
3 tablespoons oil
1/3 cup flour
½ teaspoon salt
¼ teaspoon pepper
1/8 teaspoon cayenne pepper
2 large onions cut into large chunks
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
3 bay leaves
1 ½ cup Guinness
4 large carrots peeled and cut into 1 ½ inch pieces

Drizzle the cubed beef with oil. In a small bowl mix the flour, salt, pepper, and cayenne pepper. Sprinkle the flour mixture over the cubed beef and stir to coat well.

Heat a Dutch oven on medium high heat. Brown the beef on all sides. Reduce heat and add onions and garlic. Cook until onions turn translucent. Add the thyme, rosemary, bay leaves, carrots, and the Guinness. Bring mixture to a boil. Cover with a heavy lid and bake in a 300 degree oven for 2 hours, stirring every 30 minutes. Add more Guinness if mixture becomes dry. Check seasonings and remove bay leaves before serving.

Serve with boiled potatoes.

Serves 4.

Strawberry Rhubarb Fool

1 cup chopped rhubarb
1 cup sliced strawberries (fresh or frozen)
½ cup sugar
1 teaspoon cornstarch dissolved in 1 tablespoon cold water
2 cups whipped cream
strawberry slices for garnish

Cook strawberries, rhubarb, and sugar over medium heat for 15 minutes, or until softened. If desired, puree fruit mixture before proceeding. When mixture is bubbling gently, add cornstarch mixed with water. Cook until mixture thickens and clears. Chill fruit in the refrigerator. When fruit is very cold, gently fold with the whipped cream. Leave some fruit mixture swirls visible for nice presentation. Garnish with sliced strawberries.

Serves 4.
