Morning Show with Tim Joyce and Zetty McKay
To start the morning off right, Becky, Zetty, and Tim baked some delicious breakfast treats. Blueberry Scones were filling the
studio with a heavenly scent! With just the right amount of butter folded in, these scones always turn out perfectly fluffy and
light.
If you have never had real hot chocolate made from scratch, you really must try this recipe! Tim said that it was exactly like
the hot chocolate he had experienced in Europe. Chef Becky highly recommends starting with a good quality chocolate for best
results.


Blueberry Scones
2 cups flour
¼ cup brown sugar
1 tablespoon baking powder
¼ teaspoon salt
¼ cup cold butter, cut into small pieces
1 cup fruit (fresh or dried blueberries, currants, raisins, etc)
¾ cup half and half
1 egg
1 egg beaten with 1 tablespoon water
Sugar for topping (optional)
Mix butter pieces, flour, brown sugar, baking powder, and salt. Add dried fruit and mix well.
Mix half and half with the egg, then combine with dry mixture. Knead just until ingredients are moistened.
Pat dough into one 9 inch circle on a floured surface. Cut circle into 8 triangles. Place triangles on a parchment lined baking sheet. Brush scones with the "egg wash" (one egg white beaten with one tablespoon water). Bake for 20 minutes in a 375 degree oven.
Real Hot Chocolate
2 ounces bittersweet or milk chocolate, finely chopped
¼ cup hot water
2 teaspoons sugar
1 cup hot milk
1 tablespoon real whipped cream*
*whip 8 ounces whipping cream with 2 teaspoons powdered sugar and ½ teaspoon real vanilla
Melt the chocolate with the hot water in a small saucepan over very low heat. Just after chocolate is completely melted, pour
melted chocolate into a tall glass dish. Add the hot milk, and sugar. Combine thoroughly with an electric mixer. Pour into a
mug and dollop with the whipped cream.
